Banana Bread Recipe # 2














I have tried a previous recipe of Banana Bread yet with nuts. This recipe is for a plain banana bread. I enjoy it with milk, in the morning, as a snack or dessert. It's delicious any way you eat it!

Ingredients:

2 Ripe bananas
1&1/2 cups flour
5 Tbsp melted butter
3/4 cup sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
Pinch of salt


Method:

1- Preheat the over at 350°.
2- In a mixer, place the sugar, egg & Vanilla. Start mixing.
3- Sprinkle the baking soda & salt over the mixture and mix it in.
4- Finely add the flour. Mix everything well.
5- Pour mixture into a buttered pan and bake for 1 hour.
6- Once done, keep it on a cooling rack, once cool, slice & serve.


Normally this recipe requires baking in a Loaf Pan , but I don't go by traditional methods.. I'm such a rebel, I used a Bundt Cake Pan ..haha :P

Fast & Easy Banana Smoothie...


Serves 2


Ingredients:

2 bananas, peeled and sliced
1 pint milk
2 handfuls of ice
3-4 tabelspoons honey


Method:

1. Place the bananas, milk, ice and honey in a blender and then blend until smooth.
2. Transfer to a serving glass and serve at once.

Smoothies & Shakes ~ Diet


Serves 3


These smoothies will supply most of the vitamins and amino acids you'll need for a day.

Smoothie #1

1 cup soymilk
1 cup fresh orange juice
1 apple, cored and diced
3 bananas
8 frozen peach halves
1 cup fresh pineapple, diced
1 mango, peeled and diced
2 tablespoons wheat germ
2 tablespoons nutritional yeast

Blend all ingredients together. Drink and enjoy!


Smoothie #2

1 cup pineapple/coconut juice
1/2 cup apple or orange juice
2 frozen bananas
1/2 cups frozen strawberries

Pour juices into blender. Add fruit and blend well. Enjoy!


Strawberry & banana Shake

1&1/2 cups soy milk
3/4 cups frozen strawberries, unsweetened
1&1/2 frozen bananas
1/2 teaspoon vanilla
maple syrup (to taste)

Whiz all ingredients in a blender. Serve immediately. Shake should be fairly thick.

Fondue your Valentine..

Serves 6


Ingredients:

1 cup cocoa powder, sifted
1&1/4 cups spring water
1&1/2 cups granulated sugar
1/4 cup corn syrup
1/2 cup plus 5 tablespoons heavy cream
5 ounces premium semi-sweet chocolate, chopped
Pound cake and fruit (bananas, apples, and strawberries), cut into bite sized pieces


Method:

- Sift the cocoa into mixing bowl and set aside. Place the water, sugar, and corn syrup into a pot and bring to boil. Allow to simmer for 10-15 minutes until sugar solution has reduced by about 30%.

- Pour the cocoa powder into the solution and blend with a whisk until smooth. Return the chocolate mixture to the stove and continue cooking over medium heat. Add heavy cream, bring to boil and allow to simmer for five minutes. Remove from the heat and stir in chopped chocolate. Pour into fondue pot and keep warm.

Banana Pie



As easy as one two three....


Ingredients:



1 graham cracker pie crust
1 box instant vanilla pudding (found in Sultan Center)
1 box instant banana pudding (found in Sultan Center)
2 cups milk
package cream cheese, softened
1 carton whipped topping
3 ripe bananas
1/2 cup coconut (optional)


Method:


Mix vanilla and banana pudding together with milk, add cream cheese and mix with hand mixer until thickened. Place in graham cracker crust and top with whipped topping, sliced bananas and coconut. Chill for at least 1 hour before serving.

Banana Bread Recipe # 1 - Banana Nut Bread


Ingredients:

3-4 over-ripe bananas
2&1/4 cups Flour
2 cups sugar
3 eggs
3/4 cup vegatable oil
1/4 cup milk
1&1/3 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1 cup finely chopped walnuts (or nuts of your choice)


Method:

- Preheat oven to 350 degrees.

- Combine flour, sugar, salt then add eggs and oil. Dissolve baking soda in milk and add to mixture.

- In a separate bowl, mash bananas well, then add to mixture and blend well.

- Add nuts and vanilla.

- Pour mixture into 2 greased loaf pans.

- Bake for 50-60 minutes until golden brown and the tops of the loaves crack open a bit.

- Cool in pans until pan can be handled, remove from pan and continue to cool.

Banana Cream Eclairs




Prep: 40 min.
Bake: 25 min.

Serves 16

Ingredients:

1 cup water
1/2 cup butter, cubed
1/4 cup sugar
1/2 teaspoon salt
1 cup all purpose flour
4 eggs

Filling:

2&1/2 cups heavy whipping cream
3 tablespoons sugar
1 teaspoon vanilla extract
3 to 4 medium firm bananas

Glaze:

1/2 cup confectioners' sugar
2 tablespoons baking cocoa
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 to 2 tablespoons boiling water
1/2 cup finely chopped pecans

Method:

- In a large saucepan, bring water, butter, sugar and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. continue beating until dough is smooth and shiny.


- Insert a 3/4-inch round tip into a pastry bag; add dough. Pipe 3-inches strips about 3 inches apart on a greased baking sheet. Bake at 400 degrees for 25-30 minutes or until golden brown. Remove to wire wrack.

- Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs.

- In a large mixing bowl, beat cream until it beigns to thicken. Add sugar and vanilla; beat until stiff peaks form. In another bowl, mash the bananas; gently fold in whipped cream. Spoon into eclairs; replace tops.

- In a small bowl, combine the confectioners' sugar, cocoa, butter and vanilla. Add enough water to make a thin glaze. Spread over eclairs. Sprinkle with pecans. Serve immediately.

Easy Chocolate Banana Parfaits ~ KF


This is an easy dessert recipe that requires a minimal amount of time and effort.

Prep Time: 10 min
Total Time: 10 min
Makes: 4 servings


Ingredients:

2 cups cold fat free milk
1 pkg. JELLO Chocolate Flavor Pudding & Pie Filling
2 medium bananas, sliced
3/4 cup thawed COOL WHIP LITE Whipped Topping, divided (can be found at sultan center)

Method:

POUR milk into medium bowl. Add pudding mix. Beat with wire whisk 2 minutes or until well blended.
SPOON half of the pudding evenly into 4 dessert glasses. Cover with layers of banana slices, 1/2 cup of the whipped topping and remaining pudding. Top with remaining whipped topping.
REFRIGERATE until ready to serve.

Cocktails - All about bananas



Banana Shake: serves 2



1 ripe banana, chopped, juice of 1 orange, 1 teaspoon honey, 300ml full-fat milk, 8 ice cubes, ground cinnamon.

place the banana, orange juice, honey and milk in a food processor and process until smooth. Pour over ice into 2 tall glasses and sprinkle with cinnamon.
( substitute the bananas with mangos to make a mango shake, you may wish to leave out the honey if the mango is very sweet )


Carib Cream: serves 1



1 small banana, 1 measure lemon juice, 1 measure full-fat milk, crushed ice, 1 teaspoon finely chopped walnuts.

Place the banana, lemon juice and milk in a food processor with some crushed ice and process on maximum speed until smooth. Pour into a cocktail glass and sprinkle the chopped walnuts on top just before serving.


A. smoothie:


1 cup mango juice, 1 cup orange juice, 6 strawberries, stems removed, 1 banana, ½ teaspoon grated fresh ginger, 1 (8-ounce) container of lemon yoghurt.

Place ingredients in a blender cup, blend until smooth and serve.



Tip:










If you want to prevent your bananas from going brown, simply place them into a bowl & cover with Lemon Juice or Unsweetened Pineapple Juice for 2-3 minutes. This doesn't affect the taste in any way.
