Cabbage Salad .. My Way!


Ingredients:

1 Cucumber, peeled, sliced
1 thinly sliced red onion (Shallot)
Finely Sliced green cabbage
Finely Slicded red cabbage
I shredded carrot
I green onion (Scallions) thinly sliced
2 tbsp chopped coriander (cilantro)
1/2 tbsp toasted sesame seeds

Dressing:

4 tbsp yogurt
2 tbsp lemon juice
1/2 tbsp shredded ginger
1 tbsp mayonnaise
Salt & Pepper
1 tbsp vinegar
1 tsp honey
1 tsp soy sauce


Method:

1- combine all the vegetables in a large serving bowl.
2- mix the dressing ingredients.
3- pour dressing on salad and serve immediately.

My Happy Carrot Cake Cupcakes.















Just last night I baked those lovely and heavenly tasting cupcakes, everyone raved about them and the process of making them was so easy.
The ingredients below make around 1 dozen cupcakes, so double the ingredients if you want more !!


Ingredients:

3 or 4 large carrots, peeled and grated finely
1/2 cup ground walnuts - or chopped to small pieces & toasted
2 medium size eggs
1/4 Leban or buttermilk
1 cup sugar
1/2 cup oil
1/2 teaspoon baking soda ( found in sultan center - Arm & Hammer is the one I use)
1 teaspoon baking powder
1/2 teaspoon vanilla
zest of one orange
1&1/2 cups flour
1/2 teaspoon salt
1 teaspoons ground cardamom
1/2 teaspoon of ground cinnamon

& for the frosting:  

1/2 stick butter (unsalted)
1 cup cream cheese (Philadelphia)
3/4 cup powdered sugar

Method:


- You start off by preheating the oven at 180C.
- In a bowl, place the carrots, eggs, leban (buttermilk), sugar, oil, orange zest & vanilla and whisk well.
- Then seperetly, in a different bowl whisk your dry ingredients: flour, baking soda & powder, salt, ground cardamom & cinnamon.
- mix both the dry ingredients & the carrot mixture together gently to incorporate.
- add the toasted walnuts, folding them in gently.
- Using cupcake pan (regular size) and paper baking cups, scoop 3/4 of the mixture into each paper cup.
- Bake for 28 minutes at 180C.
- While the cupcakes are baking, prepare the frosting by combining 1/2 stick of butter, 1 cup of cream cheese (Philadelphia cream cheese) and 3/4 cup powdered sugar beat until well combined. set aside.
- Remove cupcakes from oven when done. Allowing them to cool for about 5 minutes.
- Take them out of the pan and on to a wire rack.
- When fully cooled, spread the cupcakes with the frosting

Oriental Salad ~ Chinese


Ingredients:

capellini pasta, cooked, drained
4 boneless skinless chicken breast halves, grilled, thinly sliced
2 carrots, thinly sliced
1 cup mushrooms, sliced
1/2 cup bean sprouts
1/4 cup red peppers, finely chopped
1/2 cup oriental sesame dressing
2 green onions, sliced


Method:

Toss all ingredients except dressing and onions in large bowl. Add dressing; mix lightly.

Sprinkle with the green onions.

Chicken with Ginger and Soy Sauce


Serves 4


Ingredients:

1/3 cup soy sauce
2 tablespoons dark brown sugar
5 garlic cloves, thinly sliced
2/3 cup fresh cilantro, chopped, plus sprigs for garnish
1 piece fresh ginger (about 2 inches long), peeled and cut into thin strips
5 scallions, thinly sliced on the diagonal
1 Tablespoon balsamic vinegar
1 Teaspoon ground coriander
1/2 Teaspoon ground pepper
4 chicken drumsticks and 4 thighs, skin removed
2 medium carrots, thinly sliced crosswise
1 Tablespoon cornstarch
cooked white rice, for serving


Method:

- In a pot, stir together soy sauce, sugar, garlic, cilantro, ginger, 1/2 cup scallions, vinegar, coriander, and pepper.

- Add chicken and carrots; toss to coat. Cover, and cook on low until chicken is tender, about 2 hours .

- Using a large spoon, skim off and discard any fat from surface of cooking liquid.

- In a 2-cup glass measuring cup, whisk cornstarch with 1 tablespoon water. Ladle 1 cup cooking liquid into measuring cup; whisk to combine. Pour into a small saucepan, and bring to a boil; cook until thickened, about 1 minute.

- With the heat turned off, stir in cornstarch mixture. Serve chicken with white rice, and garnish with cilantro sprigs and remaining 1/2 cup scallions.


Tip:

Could be done in a slow cooker for approx. 6 hours instead of 2.

Classic Beef Stew


Serves 8


Ingredients:

2&1/2 pounds very lean
beef stew meat
2 tablespoons oil
2 cups chopped onions
1/2 cup sliced celery
5 large potatoes, cut in eighths
5 large carrots, cut in 2-inch slices
salt and pepper to taste
a few cloves of garlic (optional)
1
can condensed tomato soup


Method:

- In a large pot, brown stew meat in oil, add chopped onions and sliced celery and cook until tender.

- Add vegetables and seasonings.

- Add soup and a soup can of water.

- Simmer over lowest heat for about 2&1/2 to 3 hours, or until meat and vegetables are tender.

- Add more water as needed.

Healthy Vegetable Soup ~ Diet



Serves 8


Ingredients:

3 medium zucchini, sliced
2 medium carrots, sliced
10 mushrooms, sliced
1 medium onion, sliced
1 potato, peeled,cut into 1-inch pieces
3 cans vegetable broth
3 cups canned crushed tomatoes, with added puree
1 can stewed tomatoes
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
1 tablespoon chopped garlic
1 teaspoon dried
basil
1 teaspoon dried
oregano
additional chopped fresh
parsley


Method:

- Combine zucchini, carrots, mushrooms, onion and potato in heavy large Dutch oven.

- Add vegetable broth, crushed tomatoes, stewed tomatoes, 3 tablespoons parsley, cilantro, garlic, basil and oregano.

- Bring mixture to boil.

- Reduce heat, cover and simmer until vegetables are tender, about 30 minutes.

- Strain cooking liquid into large saucepan; reserve vegetables.

- Place 3 cups vegetables in blender. Add 1/4 cup cooking liquid. Puree until smooth.

- Stir puree into remaining cooking liquid in saucepan. Return remaining vegetables to cooking liquid.

- Season to taste with salt and pepper. Bring soup to simmer. Ladle into bowls. Sprinkle with additional parsley.



Tip:

Can be prepared 5 days ahead. Cover and refrigerate.

Chicken Fried Rice ~ Chinese


Serves 6


Ingredients:

1 tablespoon Oil
1 Egg, slightly beaten
2 tablespoons Oil
1 cup chicken, finely diced
1 medium onion, finely diced
1/2 cup carrots, finely diced
1/2 cup bamboo shoots, finely diced
1/2 cup celery, finely diced
1 cup fresh bean sprouts
1/2 cup frozen peas (opt)
1/2 cup sliced mushrooms (opt)
4 cups cooked rice (short grain)
Soy sauce
Salt & Pepper


Method:

1. Cut up and prepare all ingredients. Reserve.

2. Heat wok up with 1 tablespoon oil and fry egg into a thin sheet. Remove to plate and reserve.

3. Add 2 tablespoons more oil to wok. Heat until smoking. Stir fry chicken and onion together until cooked.

4. Add bean sprouts, peas, celery. Stir and cook for 2 minutes with wok covered. Uncover wok, add all the rest of the vegetables. Stir fry and cook covered for 2 additional minutes.

5. Add cooked rice, season with salt, pepper, soy sauce. Reduce heat to medium. Take your turner and break up clumps of rice as finely as possible. Make sure rice takes up soy sauce and does not remain white.

6. Keep stir-frying until all rice is broken up and heated through. Shut heat off. Cut up sheet of egg into small pieces and stir into rice, or remove rice to serving platter and garnish with egg slivers.

Sweet and Sour Chicken ~ Huda


Huda.. a warm, loving, caring person, a good friend and an excellent cook..

One of her recipes... very simple and very easy to make...

Serves 4

Ready in:20 Min

Ingredients:

1 pound skinless, boneless chicken breast, cubed
2 tablespoons vegetable oil
1/2 cup sliced green bell pepper
1/2 cup sliced red bell pepper
1 cup carrot strips
1 clove garlic, minced
1 tablespoon cornstarch
1/4 cup soy sauce
1 (8 ounce) can pineapple chunks, juice reserved
1 tablespoon vinegar
1 tablespoon brown sugar
1/2 teaspoon ground ginger

Method:

Brown chicken in oil in a large skillet over medium high heat. Add green bell pepper, red bell pepper, carrot and garlic and stir fry for 1 to 2 minutes.

In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into the skillet, along with the pineapple and liquid, vinegar, sugar and ginger. Stir together and bring to a full boil.

can serve with either noodles or with steamed rice.

Home-made Coleslaw ~ WS


Ingredients:

1 small head cabbage, shredded
2 carrots, peeled and shredded

For the dressing:
2 egg yolks
4 Tbs. sugar
1 Tbs. dry mustard
2 to 3 drops Tabasco sauce
4 Tbs. (1/2 stick) unsalted butter
1&1/2 Tbs. all-purpose flour
1/2 cup water
1/2 cup white vinegar
2 tsp. ground celery seed
4 Tbs. sour cream

Method:

To make the dressing, in a small bowl, whisk the egg yolks until light in color, then add the sugar, mustard and Tabasco and whisk vigorously.

In a saucepan over medium-low heat, melt the butter. Whisk in the flour to form a smooth paste and cook, whisking constantly, until fragrant, 1 to 2 minutes. Whisk in the water until smooth.

Whisk the egg yolk mixture into the butter-flour mixture, reduce the heat to low and cook, stirring, until thickened, 2 to 3 minutes more. Add the vinegar and celery seed, bring to a simmer and cook, stirring, 1 minute more. Remove from the heat and let cool to room temperature. Mix in the sour cream, cover and refrigerate until ready to serve.

In a large bowl, combine the cabbage and carrots and toss to mix. Add half of the dressing and toss to coat, adding more dressing as needed. Serve immediately, or cover and refrigerate for about 1 hour to let the flavors develop.


Serves 6 to 8.
